gps logger
I did some searching but i can't find a program that does what i want.
Is there a program which will log your trip from when the gps program runs and then allows you to view your trip. For instance, say i drop my car off at the mechanic. he decides to take my car for a spin. when i get the car back I'd like to load the recorded data to an application on my laptop (or even the car pc) and be able to review the route he took, possibly using a google earth map?
is there anything like this?

There are all sorts of ways to do this, but it depends on your receiver, the software you are using to talk to the receiver, navigation software, and so on and so forth. Can you give some more data on what you have available to work with?

Hardware solution
This GPS logger will do what you want without having a PC to log. The internal battery will run it for about 12 hours. Plug in the 12V charger to it and it runs indefinitely. You can "playback" where it has been later on the PC.

GPSSecure talks with your GPS receiver directly or MapMonkey, FreeDrive, or iGuidance 2.0 or 2.1. Take your pick

I recommend GPSSecure because it runs in the tray, is the easiest to set up, and is homemade here at mp3car.

he only needs to record it and playback later. He doesn't need the real-time tracking, and he would need to have a phone connected for this to work.
Freedrive in this instance is the best option IMO.

I think GooPs will do what you want. It plots a track of where your car has been in Google Earth. You can save the tracks in kml or kmz format. Saved tracks can be played back in GE any time.

Freedrive in this instance is the best option IMO.
GPSSecure doesn't only do real time tracking. It does recording and playback too. The real time tracking came after. He doesn't need a phone for it any more than FreeDrive does.
