You should be able to get GPS working with xbox if you use an xbox-linux distro and a cable to hook up the gps to the controller port. There are some gps programs made for linux so yes this very well should be possible.

A quick google search will bring up some stuff. It seems that GPS drive would work although I've never even tried it. Deffinitely has some ok features and is most deffinitely downloadable right now.
