Did you just shorten my username or do you actually know my last name? Anyway, I don't know what you mean by latch. Clarify that and I'll see if I can get an answer for you.

Any proper power supply like the M2-ATX will shut itself down when the battery reaches a certain level.

I tested mine, and the remote start does not trigger my ACC/IGN wire on my radio harness, so I can't start my PC with remote start. What are you tapping into to turn on your carpc w/ remote start?
You don't use the remote start, you use an AUX function. I've got a Compustar 2 way pager remote with a few auxiliary functions that I can hook up to my windows, sunroof, whatever I want. So I run a wire from the AUX1 port on the alarm unit in the car to the PWR pins on the motherboard or PSU. When I hit AUX1 on my fob, it sends a few milliamps which will tell the computer to turn on while the car is still off. Then I hit it again and it tells everything to shut down. I can even connect to it via SSH or remote into it with NXClient (
www.nomachine.com) which is free. I use NXClient at home to remote into my media center and manage the music that's playing from anywhere in the house via my laptop.
