Screw hacking the keyboard..

What kind of uses could one come up with for these?

http://www.ultimarc.com/a-pac1.html

Video games have had these things for years, why not adapt? They also have the ipac which just has a software remapping system. The a-pac is an analog adapter (POTS!) to usb...

Anyone come up with how you'd use one of these for volume knobs and control buttons?

Wow, nice find! Look into GlovePIE for controls. I already use that with a SpaceNavigator to map all the button and rotary actions. This would be very sweet as a replacement.

Those are keyboard encoders, there are many other ones available as well. Arcadecontrols.com is site about building arcade controls and arcade cabinets and they use keyboard encoders for those purposes. So you can find a lot of info on that site about various keyboard encoders. You should be able to find some other brands as well.
