You're going to have to crack the unit open, reverse-engineer the touchscreen, possibly create a PC-compatible interface (serial or USB), possibly write drivers.
On top of that, you'd lose all control of the headunit functions through the touchscreen.
You should be able to get video on the screen, but don't expect stellar quality. These units are designed to accept a composite video signal (like your TV), which is a far lower resolution than a PC's VGA output. As such, expect blurriness, especially with text.
