If you're going to fit something in your center console, you're likely going to be hacking ad cutting. There are people who's PCs are mounted in armrests and center consoles. Use the
SEARCH function and see what others have done.
The two commonly used form factors that people use are miniITX and Shuttle, both for their compact size. NanoITX is an even smaller formfactor, but it's not available to the public yet, as far as I know.

It's theoretically possible to hack your Nav setup's integrated touchscreen, but do you have the knowledge, experience, time, patience and resources to do that? I certainly don't.
use an external mouse. There's wireless stuff out there for convenience.

If your NAV system has a composite video input, you can go with any security camera with teh same input.
