Or you could just put a momentary button mounted in dash if you want a manual on off option. No need for saftey or acc. power relays etc. Just solder two wires from laptop button to your dash mouted momentary switch.

Try this: http://www.mp3car.com/vbulletin/showthread.php?t=75071

I bought one, but it needs to be soldered. Be careful, because you can fry components with too much heat (as I recently learned, though i'm not sure the soldering is what did it). There are also other solutions as tapping into the modem's resume on ring or wake on lan through the ethernet. Not too sure about the latter two.

I rigged my hatch release button up to switch my laptop on and off. Works awesome, I have a button that opens it on my key chain now so I don't know if you have that option available to you.
