What's the best hot dog?

"Best" is subjective.
I suggest reading peoples' reviews and opinions of various touchscreens and forming your own opinion of what is "best".

I have been doing a lot of research on this lately as I am about 1 hour from finally making my purchase. It seems that a lot of people on this board use the 7" Lilliput 629 and are happy with it. It seems like the best bang for the buck if you aren't looking to spend $700+ for a transflective display.

I think the BEST monitor would probably be the transflective.

I like phylon screens.
Auto On and Off which is a major feature for me.
Check the specs.
I have used these in all of the installs I have done (4 of them) and they have never dissapointed me. I live in Wisconsin so they have seen extreme temperature differences and never failed me.
Here is a link to where I got it..
There more than the lilliputs but wireing is better since there is one cable from the screen instead of a whole bunch branching off right under the screen. Also note all the things they come with.
Logic Supply has never failed me yet... So feel confident with them.

Lilliput 619GL-70NP

Bolt in kit with toushcreen
Lilliput LCD (Lilliput Part Number 619GL-70NP)

The Lilliput LCD kit allows you to install an LCD in your dash, replacing the stock radio head unit. The LCD has a 15:9 VGA input and a built in touchscreen for use with your computer. It also has 2 video inputs (PAL or NTSC) to hook up to a DVD player, XBox, reverse camera, etc.
