I dont know for sure, but i know of vga controller cards that allow for vga, s-video, and rca inputs for the same screen. if your screen is a vga screen with a hirose style cable, you would probably be able to do s-video.. mind you the controller cards with those capabilities are quite pricey.

well, you have to outline what you want to use the screen for. the digitallWW/xenerac/dc customs screens are pretty decent. i dont have one personally so i cant attest to the quailty. but i believe they are your best bet for a 7" widescreen. plus there are ones that are vga input and touchscreen ready.

also, if you have your heart set on s-video, you may want to pick up a converter to make the s-video play on a vga screen. there are several types out there... they are usually refered to as a "vga box" or at least some of them are.

You can get Touchscreens, Motorized which don't do VGA.. digitalww sell them I'm sure.

I have VGA and it's definetly worth it - running 1204x768 and you can read text perfectly.. got mine from DS Customs (700YYV)
