Alphanumeric Character LCD Q's

Hi people.
Just wondering if someone's got any experience with Data Vision LCD's.
I've got two of them, an 8x2 and a 20x4.

The spec sheets only list 'maximum' ratings. The say something like:
Forward Voltage If=280mA, yellow-green, typical voltage=4.1

Now, does this mean that I should size my resistor for 4.1V @ 280mA?

Also, I don't quite understand why I need a potentiometer AND a resistor. Isnt' a pot just a big variable resistor?

I'm going to try to find an email address for the company and email them.
