The shileded 25' VGA cable is run through my dash, down my door sills, and into my trunk. Could it be interference? It's running on the opposite side from my 4awg power cable and other cables, but I'm thinking there might be some electrical cable in my door for factory stuff anyways (fuel pump, etc..)

Try attaching the monitor directly to the pc. Eliminate the 25' cable all together. If the problem is still there, you know its the monitor or drivers. If the problem is gone, you know its the connectors, cable itself, or the total length of cable.
