I was wondering if I could get a regular touchscreen kit from here http://www.digitalww.com/7TSK.htm and use it with my lcd screen I already have.

sure, you can even use it on your table top. TS has nothing to do with the screen other than the ability to "pass light", some are durable some are not. Just make sure that it fits cause you can't cut it.

Well actually it depends. Alot of the time your going to custom place the lcd screen over the lcd screen. Make sure your lcd has some pegs/legs/brackets it uses that can be bend/shaved/cut/whatever to fit in the touchscreen.
