1990 Mazda 929S
is there any software out there that I can use to monitor the engine on my car. I have the factory service manualso theoretically I could program what the resistance is at a certain level(temp/intake air/etc.) right?

i doubt there's any software for a pre-obd2 car
best bet is to get something like the Fusion Brain, the sensors it has could basically do anything you want, with a little creativity

Is there anyway I can get something would read the resistance of each sensor and transfer that data by reading a scale.
For example:
Water thermosensor: when coolant temp is 68F the resistance is 2.5 ohms
IAT: at 68 degrees the resistance is 40 ohms
FC3S: you live in korea right? have you seen any kia potentias around lately?

Yes, you'd need another resistor. Look into voltage dividers
