The board doesn't come with a PCI video card, its just onboard. You can overwrite it by adding a video card into the free PCI slot that it gives. Though after I did a quick search I could only find PCI 2.2 cards with single video channel. PCI express is needed for the dual video.
What I would do in your situation is run a second computer off your psu and run a touchscreen (or touchpad,trackball etc) for control. This will be much easier for you then trying to juggle the software between screens. The type of computer im talking about is those very low power, cheap solid state ones... like
