I disagree...

Laptops are shock resistant, they have everything you need already built in, and if you get a port replicator, you can take it out very easily without worrying about unplugging everything.

I'm still very much considering this route.

I am going to have to disagree with your disagreement...laptops are more limited than conventional component pc's...the only exception is a port replicator that has someplace to sit, and even then you have power, shutdown/startup, and space issues. At the moment, a mini-itx/opus/lilliput is a nice flexible $500-600 touchscreen solution for an in-car pc. This of course assumes you are starting from scratch...if you need to use stuff you already have (ie, laptop) that changes the game.

I think it's a great idea to start with a laptop if you have one. I know the issues of startup/shutdown but i'm using one in the car at the moment for testing and only have to press the power button on once at the start of the day (leave the DC adaptor on when not in the car) and shutdown with the touchscreen. With this my laptop is always on and just the screen turns on/off with ignition meaning it is ready straight away, no delay.

They are limited but if you can pick up a cheap one (busted screen?) with all the bits on it you need then they are a good buy to start you carputer project.

At first I was going to put a laptop in, but had issues with it, most was the speed of the processor, and I didn't really want to use an expensive laptop for the job.

also I knew the project would outgrow what ever I started with and a Desktop style is far more flexible to upgrade and the suchlike than a laptop.

...it all depends on what you want, and how much you want to pay...and how reliable you would like your setup.

Here's what I'm buying.

Toshiba 2.4ghz Celeron
30GB HDD
DVD/CD-RW
256MB RAM

On sale at Best Buy tomorrow morning for $499

What problems will I have with shutdown if it's in the trunk? Is it possible?

I'm a laptop user and have to reach under the passenger seat just once to turn on, thats about it. I had a old laptop with a busted screen so it was the best route for me, but I can do everything the people with the computer in the trunk can.
