Yes, you can use a VGA -> RCA composite adapter with your headunit. In general, the display is not going to be as crisp as with a VGA screen. You may be able to use a front-end like Centrafuse or FrodoPlayer and see your visualizations just fine.
In general, things will look blurry and text will be hard to read.
