i assume it doesn't have a VGA input, which is going to render anything you display on it to be very difficult to read. Certain applications that were written with NTSC output in mind like windows media center and apple's front row can be functional but the output just won't be as crisp as with an actual VGA display. As far as using the touch screen to control the PC, it can't be done easily.
Now granted, with a certain level of electronics expertise, you can achieve all things with what you have, but otherwise it's going to be very similar to my setup which uses an Eclipse AVN-5435 as it's display. I control the PC through a Griffin Powermate knob.
