I have pondering the use of flash devices since it was mentioned - are you referring to something like the Sandisk SD cards. Something like that would make sense, I have a 2GB one in my phone, however I understand that they have a limited life span, or is this down to manufacturer?

I need at least 80Gb of storage - we will be storing a stack of music, all our photos and videos as well as several GB of maps and satellite images.
I already have a GPS mouse mounted on the roof.
I would want at least an 8" screen - have you tried looking at a map on a computer whilst bouncing around off road?
I would also want at least 512-1Gb of RAM (bearing in mind no paging file) and a half decent graphics card for 3d rendering of routes.
What are the dimensions of your case?
