[UK] Customs duty when buying from the US...

What is the likelyhood of UK customs sifting out a package from the US?

For example if I order something from the mp3car store or from DigitalWW - would they pick up on it even if its marked as a gift?

I used to get RC car stuff sent over from America and always got stung by customs. If you get the item packaged as a gift then it should get through or get them to issue a fake invoice with a lower amount on. But that is kind of illegal so you shouldn't do it

When ordering stuff from Hong Kong I usually budget 24% to cover any nasties.

Speedpost (Parcelforce over here) is usually cheaper than other couriers like UPS.

Whatever you order there will be a charge of £13.50 for handling plus VAT, although sometimes VAT can vary depending on the goods.
