Lets be honest, the safest way to navigate a car pc is to implement a highly specific/trained and accurate voice command interface. Similar to OneVoice on Streetdeck, before that **** hit the fan. Then it would only require 1 button, usually a steering wheel button, and u just tell the PC what to do, and it repeats what its doing and does it! Safest way possible that I can think of. Good thing about this is it's starting to get popular.

Punky is on a distinguished road
I'd like to add my opinion on why you should still tailor your FE toward touchscreen.
Systems with stuff like the powermate, iDriver...etc. all require you to know where the selection is, therefore you can't really take your eyes off of the screen. On the other side of the issue, touchscreen although you have to point to a spot to click, most people like myself, has done it 1000s times and memorized where most things are. I can usually next songs/play/pause without looking at the screen at all. Altogether you can always achieve more per press/click with a touchscreen. The only way you can true take your eyes off the screen is perfect speech recognition, which is more expensive to do in my opinion.

I am new to the carpc, but I would say

make huge buttons, and only a few on each screen, if the list gets too big, have a "next" and "prev".

Garmin are leading the gps and it's also because of their interfaces..

I'D rather have to go 4 sublevels than have all options on the top level.
