I've always used the Sony Ericsson connection software instead of Cingular's CM so I don't know for sure what those different profiles do. My understanding is that if you are using an EDGE-capable phone then it automatically tries to use it over GPRS. But there is one thing to look out for.
If you have Media Net or Media Works (the old name) then you MUST use wap.cingular as the access point, and NOT use isp.cingular. isp.cingular is the access point for the Data Connect plans, and if you use it mistakenly you may rack up data charges.
So check that 'EDGE/GPRS Accelerated' profile and make sure it isn't using isp.cingular.

Ok great, thanks for clearing that up. I thought it was something along those lines; the other two profiles do use isp.cingular, so I will stay away from those. I thought it was weird that it created those automatically.

If you use isp.cingular on the wrong plan then you WILL rack up data charges and you WILL have to call to get them removed (hopefully), and you might have to explain how you came to get them and cause more problems. isp.cingular is not programmed into Cingular's phones, wap.cingular is, so if you try to use isp.cingular then you have to be intentionally doing something they don't want you to do.
Better to not repeat the mistakes of others.
