Once you jailbreak it you can go in to cydia and download screenspliter. It works great to mirror everything on the itouch/phone. I recently installed my car pc only to decide to switch to my iphone as the main and the pc is used on occasion. So far the main problems (more annoyances) I've found are:
-the icons (really the whole home screen) don't orient to landscape nor does the ipod control (the overscreen menu when you're in a program other than the ipod, like the home screen, if you open a different app then double tap the home button it will)
-email doesn't orient to landscape (use byteSMS to text in landscape though)
-you have to switch to vertical view while listening to music to switch back to to the ipods main menu.
-pandora is a li'l slow to load
-there's a few other things that escape me. I'll update as I remember
If you haven't been able to downgrade yet try doing it while in DFU mode

Current status: Argh. Still having trouble jailbreaking my iPod touch 1st generation. Anyone with suggestions on what to do, I'd appreciate it.
To mirror the image from your iPod to your car's screen at all times, you need an application like Screen splitr. Unfortunately, Apple doesn't like certain types of apps on the app store. This is one of them, so you have to find a way to load that app onto your iPod or iPhone.
The way you do it is to jailbreak your iPod to allow it to connect to non-Apple app stores. Fortunately, people much smarter than I have figured out how to do this and written software to allow it. Here's how it works:
1. Log in to the dev-team blog page for latest info.
2. For iPod touch, you download something called Quickpwn.
3. Run Quickpwn to jailbreak the iPod and it will install a program called Cydia, which gives you access to non-Apple applications.

As of 2/23/209, I'm having trouble jailbreaking my iPod. Using Quickpwn, I can accomplish all steps except when it loads Cydia onto the iPod and reboots. It fails to do so and it eventually shuts down (the iPod, that is). When I restart, it boots properly but there is no Cydia application on it.
Here are some of the screenshots from the process:
1.First, it builds a special software version for your iPod's firmware.
2. Then, you are prompted to put the iPod in DFCU mode for direct communication with the iPod.
3. The modified software is uploaded.
4. After finishing, it asks you to wait while it reboots.
At this point, QuickPwn says it will reboot your iPod in just a moment. On my iPod it takes a long time (like 10 minutes) where the screen is just white on the iPod, then it shuts off and does not reboot. Eventually, I reboot it manually and it boots fine but does not have the Cydia application on it. HELP!

Try jailbreaking it with quikpwn but unselect the the cydia and installer boxes. Once it restarts go back and then re-jailbreak with just cydia installed. I've done it this way and it works fine.
Also make sure you're using the correct custom firmware for the firmware installed on the phone.
I've also heard of people having to re-jailbreak numerous times to get it to work right.
Oh and make sure you're using their most up to date download.
I'm using the most up to date version (2.2.5) but there's no 'advanced' mode to unselect cydia and installer boxes. I may have to try this on a different Mac.

iPod Touch is jailbroken. Turns out the Mac I was using it on (an elderly G4 dual 1ghz) has an issue with the final USB flash of the NOR on the iPod. This is related to 10.5.6 on some computers.
Synching it to a different Mac (intel based iMac) did the trick. The iBug Touch is now sporting the cydia app store on it.

hey buddy!! keep me updated!! i getting a ipod touch a week from now or so. i got the 1st gen for my gf for $80 on ebay.. insane deal! after playing with it and jailbreaking it for a few weeks i finally gave it to her for her birthday haha. some nice things u might like from cydia are backgrounder and dock. backgrounder allows programs to run in the background after closing them so u can easily bring them back up (ie. aim, allows u to receive ims while working with other apps.) Dock is a niffy app that when enabled, places a very small sunburst in a corner off the springboard screen. when pressed, brings up a quick app toggler (like pressing alt tab on pcs/macs).

Here's another interesting thing I've found.
When I'm running screen splitter and Pandora the iphone will turn screen splitter off while in landscape mode.
