Alright, first off let me apologize to everyone who keeps checking back for updates and not finding anything. I know for a fact that there is at least one of you because you told me... I've been really busy since my last updates, but now I'm on winter break and am hoping I can finish it before next semester which starts in February so stay tuned.
To answer your question wizi, I am not planning on using a power inverter at all. I am going to use a DC-DC PSU. I cant remember off the top of my head what its called right now, but Ill check for you and edit this post right now.

It is the 160W M2-ATX DC-DC PSU. That being said, I would assume you could use any power inverter that will keep up with your AC-DC PSU of 160W or more to run this system.

I thought you used a normal Desktop Motherboard in the beginning, Thats why i asked you about the inverter. lol
it is a normal desktop motherboard. the form factor is mini itx
