Let me preface this by stating that this is the most ghetto carputer youíll ever hear about.
I build a carputer with parts that I received for free. A few years back, while in was still in high school I asked the network administrator if he knew where I could get some cheap computers to be used for a router/firewall, and some dumb terminals. ( I had this crazy idea to have a dumb terminal in every room of my apartment, including my bathroom) he told me that the school was actually throwing out there entire computer lab (like there first one) and that I could pick over the bunch. To make a long story short, I made out with about 10 486s a whole crap load of hardrives, Ethernet cards, scsi cards , data switches etc. I even got the old server , the one that housed all the files for the entire school system! ( a very small school at that) the server is what I have subsequently converted into my car computer.
Its not much by todays standards, but when it was new this server was pretty awesome. 100mhz, 128mb ram, 4gb scssi hard drive. This is back when you could go to best buy and spend $2300 on a 486 with 32mb ram and 540mb hd. (what my old man paid the year this server was manufactured) I have it overclocked to 120 Mhz. I was going to use Linux for the os, but I had a hard time getting it to work on my obscure scssi hardware. I chose win 98 because it was the only thing I had available. I configured it to load the required programs on startup, and win amp. That way there would be no need for a display. (win amp has keyboard shortcuts, so all I really need to do is turn it on and use 4,5, and 6 on the kepad to operate the thing. ) I use one of thoes ac-dc car converters (had one laying arround) and an fm modulator hooked up to the audio out of the soundcard. All in all itís a verry good and cheap (if not free) beginner/poorman/college student carputer.
haha i love it.. no display is kinda ghetto (the main reason i use a carputer.. an ipod could do what your suggesting), but it was free and who the hell's gonna argue with that!? :P
i actually have a dell pocket dj that i used to use the fm modulator with.
its just more fun thisway.

trust me, you'll get sick of having no display. I had mine in for about 2 weeks before my monitor just came in. I about went crazy every time the music stopped and all i could do was hit reboot.
