I finally purchased my materials and they will be delivered on Monday. Here is what I got:

I decided on the Aopen since the Carnetix has the wiring kit which makes everything very simple to do. I know everything about computers, but not much about car wiring so that helps out a ton.
The monitor will be mounted in the map pocked on the dash. There will need to be a little modding done for a good fit. The plan for now is to not have it powered open, but that may come later.
The PC will be in the dash behind the glove box. I will mod it so there will be access to the drive and USB external hard drive.
I will use the stock stereo and I have added the Aux-Mod for audio in. I will be replacing the stock speakers and doing some sound dampening all at the same time. I figure it will be a month or two before I really start installing the system into the car since I don't have a warm place to do it right now. Until then I will get all the software installed and running smoothly. Once I get going I will try to take a lot of pictures to help with anyone else wanting to do the same.
You are pretty much running the same set I have. Are you planning on using the onboard sound?

System always under construction
Could you give an update on the how your sound testing is going? I am using a similar set up to you and I am having trouble w/ sound only coming out of my right side speakers. So I would like to see if i can mimic your setup if it works.
